Wild but mild

Wild thyme (Thymus serpyllumolens) has been known since ancient times. It contains an invigorating, strengthening essential oil called thymol, as do all types of thyme. As an aromatic addition to sacrificial fires and religious rituals, wild thyme was highly prized by the Romans. It has an aromatic and beguiling scent. However, its aroma is slightly milder than that of thyme (known as Thymus vulgaris). In this respect, 'wild' refers more to its way of life than to its aroma. A creeping, dwarf evergreen shrub, it likes to live on the fringes of society, in the stony wilderness.
